If you want to move your career in hospitality on to the next level – advancing your skills in food preparation, developing meat, poultry, fish and pastry dishes – plus pick up skills in creating positive work relationships, our Professional Cookery Level 3 course will put you on the right track.
Our career pathways show you a typical route through the various stages of learning, what you will learn along the way and the careers these programmes could lead onto.
On this advanced-level practical course you learn how to: establish and develop positive working relationships in hospitality; maintain the health, safety and security of the working environment; maintain food safety when storing, preparing and cooking food; prepare, cook and finish complex dishes in meat, poultry, fish and pasta; prepare, cook and finish complex bread and dough, cakes and sponges, hot and cold desserts and the development and introduction of recipes and menus. Assessment of your practical skills is continuous and we test your theoretical knowledge too. Your tutor monitors your progress and offers advice and guidance so you achieve the most from your study. You learn primarily through practical sessions, though there are theory sessions too.

College is more hands on and different to secondary school. I have gained skills and, when I complete my Level 3 qualification, it will be more likely that I get a job."
Applicants for the Level 3 programme will need to have completed a Level 2 qualification in chef's skills or have a minimum of three years' relevant work experience in a quality establishment.
They will normally have at least 5 GCSEs at Grade C or above (including some subjects related to the proposed area of study) and the willingness to study for an additional Level 2 qualification in English and/or Maths.
Applicants will be invited to attend an interview and complete an internal assessment. All students will have their literacy and numeracy needs supported within the programme.
